Friday Feedback

It's Friday Feedback time again over at A Steady Rain and, although I was too busy with VBS last week to participate, I am back at it again this week!  This week's question is:


What is your favorite Sunday dinner or recipe?

We, like many people, love the pot roast and potatoes and carrots in the oven meal.  But, I would have to say my new favorite thing to come home to on a Sunday at lunch time is "Melt In Your Mouth Potatoes."  I originally got this recipe from my friend, Rachel.  I had mentioned that we get a lot of potatoes given to us, and she passed this recipe along for me to try out.  And let me tell you it is just delicious (unless you don't like potatoes!).  So here is the super easy recipe.  I dare you to try it!

7 medium potatoes, peeled, thinly sliced.
1 medium onion, sliced.
4 cloves garlic, minced.
2 green onions, chopped.
1 (8oz) can mushroom pieces, drained
1/4 cup flour
2 tsp. salt
1/2 tsp. pepper
1/4 cup butter or margarine, cubed
1 (10-3/4 oz) can cream of mushroom soup
1 cup Colby-Monterrey Jack cheese, grated.

In crock pot, layer 1/2 potatoes, then top with 1/2 of the onions, garlic, mushrooms, flour, salt, pepper, and margarine.  Repeat with remaining potatoes, and veggies, then top with mushroom soup.  Cover and cook on low for 6-8 hours (I actually do High for about 4 hours) or until potatoes are tender.   Sprinkle with cheese the last 30 mins of cooking time.

So there you go!  It is so simple yet so tasty!  It goes well with chicken, but especially ham.  I usually cut up all the veggies and such the night before, then all I have to do in the morning is peel and cut the potatoes then throw it all in.  Also, you can switch up the cheese, too.  We like it with cheddar, too!

Hmm.....  Now that I have spent all this time talking about it, I think I just might make it for Sunday!  Well, there's my "feedback" for this Friday.  Now it is off to continue peeling off wallpaper in our office which I am making into our classroom.  We are starting school this week for Liam.  Say what?  Is he really ready for this?  Yup.  Is Mommy ready? Nope.  But more on that later.
